Going to the Chapel

I hope you had a wonderful Valentine's Day and shared it with all the people that you love. I know I haven't posted a blog since January because we went out of town so I'm getting back into the routine.

It's only February but that also means that weddings are just around the corner. Weddings will be happening before you know it and soon you will realize that you have one every weekend from April 'til August :) I got married in the month of May and so did two of my close friends. Spring and Summer are most popular for weddings. The weather is beautiful which means it's great for pictures and outside weddings.

My next 3 blogs will be about wedding cupcakes and each is a sweet, simple and classic wedding cupcake. It would be great to make them for a bridal shower or for a wedding reception. They are easy to do yourself and to have others do as well.


I started off using white cake but these days it's not quite as traditional, and you can have whatever   flavor cake you love. I first put about 3-4 tablespoons of icing in a measuring cup. I then melted it for 10 seconds stirring it half way. It will be a little more liquid than the texture of cool whip, but it can't be too runny. You don't want it too melted or it will be very messy and drip everywhere. If you find out that you have microwaved it a little too long then stir in a little more icing.

Next, you simply take the cupcake by the liner and hold the cupcake upside down and dip it into the icing making sure that the top of the cupcake is covered. As you begin turning it back to the right side up the icing should drip off a little on the side and then stop leaving you with a smooth top. If you dip once and you find air bubbles on the surface and then you can always dip a second and third time to make it a little more thick on the top of the cupcake. After dipping the cupcake I placed it in the freezer for about 5 minutes while I got the icing ready to pipe. I have a very small icing tip but if you don't have one then you can also just use a zip lock baggy and cut a very tiny hole in one of the corners. Next I took the cupcake out of the freezer and began piping the icing. I made swirls and dots and different designs on the cupcake. I just wanted to make sure that I took up the whole cupcake with different piped designs so there wasn't any awkward open space.

Once I was done piping the icing I was done decorating the cupcake. Like I said it's very easy and anyone can do it. Also remember that you can make the colors different depending on the colors of the bridal shower and the reception.
